Pro Tip #1: Use a lid in the freezer

All freezers have a smell, and to avoid it leaking into your sorbet and altering the taste, put a tight-fitting lid in the container. Best to find a container with a close and tight lid to avoid freezer smell in the sorbet. A lid also helps avoid freezer burn on the mango sorbet.

Pro Tip #2: Cut mango when it is very ripe

When mangos are very ripe, the true flavour of the mango and its sweetness are present. When you cut it at the right time and immediately freeze it, you lock in the flavour of fresh mango. And it's the best time to use it to make mango sorbet.

Pro Tip: 3: Add Alcohol to soften the sorbet

Yes, when you freeze water it solidifies in the freezer. Adding a tiny bit of alcohol in the sorbet or corn syrup helps soften the sorbet so it is easier to scoop it out of the container.
