My first introduction to frozen Mexican Bolis was through an aunt of my husband’s. She makes these super creamy ice cream in a tube for special occasions.

When we have family gathering and dessert time is upon us, she would always suggest to look in the freezer for her frozen Bolis, and EVERYONE would jump up to get first dibs on them.

She’s famous for her peanut, chocolate, vanilla, and Rompope flavoured Bolis, and she’s also famous for not marking them.Every time we grab it, we investigate it for a good one minute, discuss what the possible flavours are, and take the plunge with our choices.

Sometimes we get it right and sometimes we don’t, but there’s always someone to take our second choice. It’s a fun game, and its part of the charm of our family in Mexico.

Imagine... Ice Cream in a Frozen Tube!!!

For years we enjoyed her bolis, until the pandemic happened and she stopped making it.

As a curious human who also happens to have a food blog, I shyly asked her the secret to her Mexican Bolis recipe. As she rapidly talks about it, I slowly built up the courage to ask her for the exact measurements to her recipe.

Some people are a bit secretive about their recipes, but she beamed with excitement and showed me all the products she uses and the other products I shouldn’t be using.

So now, the secret is out.

It’s addicting to eat, and it’s a fun family affair to put the Bolis together.

Ingredients I used

Like I said, there’s some specific brands you’ll want to make with this recipe to get the authentic Mexican flavour. If you don’t live in Mexico but know of a Latin store, you may be able to get these brands from there. However, if you know you can’t find these specific brand, any brands you’re familiar with will do the job.

Carnation Dried Milk 

Strawberry Pulp

To make the strawberry pulp, we first measure out 2 cups of fresh or frozen strawberries, and cook it on the stove. With the strawberries, we also add in the sugar, vanilla, and lemon juice. Let it boil in medium heat for 10-15 minutes until the liquid being boiled down is less watery and more bubbling like syrup.

Let it cool down to room temperature and puree the strawberries with a blender. Use a strainer to strain the seeds out. And voila, you have some delicious strawberry pulp to add into your strawberry bolis.

Plastic Bags

To make the Bolis, we use small plastic bags with the measurements of 8×26 CM. I’ve provided the link here for you to see how the bags look like. In Mexico, Bolis is always ice cream in these small plastic pockets. I wish there’s another environmental friendly option, but for now it is what it is.

We usually fill it up to 3/4 full – leaving space at the top to tie a knot. The knot doesn’t have to be particularly tight. Tieing the top can be a bit challenging for younger children, especially when it is filled too high up in the bags.

I advise you to leave enough room to tie the top comfortably, or you’ll be spending more time than usual trying to tie the top and making a big mess.

Frozen Strawberry and Nutella Bolis

Strawberry and Nutella Frozen Mexican Bolis

Equipment

  • Basic Food Scale

Ingredients
  

  • 340g dried milk
  • 2L warm water
  • 1 can evaporated milk
  • 2 can condense milk
  • 4 tbsp Nesquik chocolate milk powder
  • ¼ cup Nutella

Strawberry Pulp

  • 2.5 cups frozen or fresh strawberries reserve half cup on the side
  • 1 cup sugar
  • 1 tsp vanilla
  • 1 tsp lemon juice
  • 3-5 drops red food colouring optional

Instructions
 

Strawberry Pulp

  • In a pan, add 2 cups of strawberry (reserve ½ cup of strawberries for later), sugar, vanilla, and lemon juice. Bring the pan to a medium boil and reduce the water by half. Approximately 10 minutes.
  • Let the mixture cool to room temperature. Puree the strawberry mixture in the blender until smooth.
  • Use a strainer to take out chunks and seed. Reserve the strawberry pulp.

Bolis Milk Mixture

  • In a very large plastic bowl, combine the milk powder and warm water. Use a whisk to dissolve the powder into the water.
  • One can at a time, use the whisk and stir in the evaporated milk and condense milk together in the milk mixture. The. base for the milk mixture is done. After here is where you add in your flavours. Split this mixture into two separate bowls.

Nutella Bolis

  • In one bowl of the milk mixture, add the Nutella and Nesquik powder together in the bowl with a whisk. Set aside.

Strawberry Bolis

  • In the other bowl, add the strawberry pulp and the milk mixture together with a whisk.
  • Chop the remaining half cup of fresh or frozen strawberries and stir it into the mixture. Set aside.

Assembling the Bolis

  • Place a funnel on top of the bag and pour enough liquid to fill 3/4 of the bag. Remember to stir the liquid before placing it into the bags, for some fillings settle to the bottom.
  • Tie the top of the bag. Repeat
  • Place the Bolis in the freezer until completely frozen before eating. Enjoy!
