Spicy Corn Dip with Manzano Pepper Recipe
It's corn season and there's more way to eat corn than BBQ corn and butter on the cob!
This delicious and spicy corn dip is so easy to make it will take you less than 30 minutes to prepare! And it only asks for 5 ingredients!
It has a corn chewy and crunchy texture to it, and a whole lot of heat from the manzano peppers. This is our favourite dish on the side when corn season is in full swing. It's easy to pair it with the main dish. One scoop of this delicious spicy corn dip and watch it disappear in minutes!
My least favourite pet peeve when it comes to eating corn is getting food stuck between my teeth. It happens all time whenever I eat from the cob. now that I have this recipe where I cut up my corn from the cobs, I can finally enjoy corn to the fullest without worrying about embarrassing myself.

Ingredients for Spicy Corn Dip with Manzano Peppers
Corn
I know you can get corn any time of the year, but there is a moment around summer when corn is in high production. Therefore, I do consider corn a seasonal product for households.
For this recipe, you can use any corn you like or whatever you locally have. There are many options out there like sweet corn, rainbow corn, starchy corn, and many many more. Whatever is available to you works! That's the beauty of this recipe, it's versatile!
Manzano Peppers
These peppers are a yellow colour and medium round size peppers. When you slice it open the seeds inside are black. It has a moderate spicy level, but it is still twice as hot as the jalapeños). The taste has a unique fruity citrus flavour to them. They also have some sweetness to them, like bell peppers.
In Mexico, it is usually eaten fresh in salsa and rarely cooked. In this dip, we like to use Manzano peppers because it the taste doesn’t overwhelm the palate or mask the pepper’s unique fruitlessness. I must warn you though, it does make a few a jab or two.
If you can't find Manzano peppers, jalapeno is a good replacement for it.
Onions
I use white onions for this recipe. I like cooking them in oil first to get the fragrance out. Usually, raw onion is a bit spicier and has a strong flavour, which is not ideal for this recipe.
Mayonnaise
Regular mayonnaise is fine with this recipe, or whatever you have in your pantry. If you're looking for a low calory option, you can always buy low-fat mayonnaise to keep the calories low for this recipe.
Another low-fat option is to replace mayonnaise to a low-fat yogurt base.
Lime
Lime adds zest and brightness to this recipe. For more lime flavour you can always zest the skin of the lime into the dip.

Spicy Corn and Manzano Pepper Dip
Ingredients
- 6 corn or sweet corn
- 1-2 manzano peppers or jalapeno peppers
- ¼ white onion
- ½ cup mayonnaise or yogurt (fat free option)
- 1 large lime juiced
- 1 tsp salt to taste
- black pepper to taste
Instructions
- Wash and tear off the leaf of the corn if it has any. Cook the corn in their hot boiling water or steam it in an Instant Pot. Boiling water: Boil the corn for 10 minutes.Steam with Instant Pot: 10 minutes.
- Meanwhile, sliced the onions in thick slices, and thinly sliced the manzano peppers. In a pan, heat 2 tsp of oil and fry the onion and manzano peppers until soft and fragrance. Place them in a heat proof medium size bowl.
- Take out the corn and let it cool until it is ready to be handled. Use a sharp knife and cut the kernel off the corn. Place them in the same bowl with the onion and peppers.
- Mix the rest of the ingredient together: mayonnaise, lime juice, salt and pepper. Can be serve hot or cold.
