This Easy No-Knead Rosemary Bread is a savoury beer bread. It is one of my favourite variations of bread.

It's an easy rosemary bread recipe with no waiting time to ferment. It's so flavourful and delicious I love slathering fresh butter and sea salt on it. This Rosemary Beer Bread is something you probably will never taste unless you make it and it's SO easy to make you will not believe it.

This rustic rosemary bread is also great for dipping into olive oil and balsamic vinegar. I make sandwiches with this bread, and I put in my homemade Smoked Canadian cured ham. It doesn't require overnight fermentation in the fridge.

You'll blow through this recipe flawlessly like a pro with my tips below. The hardest part? Trying to wait for the bread to cool down because once it's out of the oven, you'll want to dig into it ASAP!

Easy Rosemary Beer Bread

My Story

Few years ago when I was visiting an aunt from Texas, she showed me her large rosemary bush at the front of her house. She's very proud this plant grew so large on it's own, and the freshness it brings when she gently brushes against it.

Rosemary plant is a drought-friendly plant, and because it likes dry roots and prefers to absorb moisture from the air through its foliage. She asked me to make something with it because she has a lot.

This artisan bread always brings me back to that day. She loves this bread so much that every time she visits me in Mexico she always asks me if I have time to make this bread. She requests it so much that every time she comes, I always show up with a loaf of this bread without her ever asking me again.

Flour

No knead bread whole wheat: In this no knead bread recipe we call for all purpose white flour. You can use a whole wheat flour, but I wouldn't recommend to add the full 3 cups of whole wheat.

I suggest to make it half and half. Half all purpose flour and half whole wheat flour. 

No-Knead Bread without Dutch Oven

This bread is baked in a bread loaf pan and requires no dutch oven. Many bread recipe requires a dutch oven or a vessel with a lid, but the dough we are making is very hydrated so a dutch oven is not required. We do add some butter at the top of the dough when it is ready to be baked. This helps mimic the crispy bread made with a dutch oven.

When I say this is an easy no-knead bread, I really mean it. 

The loaf pan I use is this one: Nonstick Baking Bread Loaf Pan. I like how it comes in two and identical. My baking shelf has many assorted sizes of pans and cake moulds. It can feel very overwhelming seeing it all pile up unevenly.

Stand Mixer with Dough Hook

I don't like to sweat, especially in the kitchen. So when I know there's a shortcut for creating less work for me, you know I'm down for it. For this recipe, you will need a stand mixer with a dough hook. It will make your life so much easier and faster when it comes to making your dough come together.

On a side note, besides making bread, a stand mixer has been like an assistant for me. I use it so often to make a pie, cookies, cakes, pastries, etc. I even use it to make my rice noodles. I have special attachments I buy that attach to the machine to make pasta, grind meat, and shred vegetables. I personally have the Kitchenaid 7 Quarts, Stand Mixer.

Heat in the Oven

The oven heat needs to reach 350°F. Often times most oven to make bread requires high heat up to 400-450°F. Because we are not using bread yeast or sourdough starter, the bread doesn't require that large pull of heat. We are using baking powder to rise the bread, similar to cake making; therefore, high heat in the oven is not necessary. 

Patience is a Virtue: Cut Into the Bread AFTER it is COMPLETELY Cooled

Honestly, the hardest part of the recipe is resisting the urge to cut into hot bread. When you take the loaf of bread out of the oven and out of the dutch oven, it is still cooking on the inside as it cools off. Cutting into it when it is doing its last part of the cooking process will cause the inside of the loaf to be under cooked and gummy. Not to mention releasing all the moisture out in the open air!

Easy No-Knead Rosemary Beer Artisan Bread

Ingredients
  

  • 3 cups all purpose flour sifted
  • 3 tsp baking powder
  • 1 tsp salt
  • ¼ cup sugar
  • ¼ cup chopped walnut
  • 1 tbsp fresh chopped rosemary or 1 tsp dried chopped rosemary
  • 1 12oz beer
  • cup melted butter used on top the bread before baking

Instructions
 

  • Preheat oven to 350°F° and place the rack at the middle of the oven.
  • Grease a large loaf pan with spray or butter. Set aside.
  • Using a stand mixer with the hook attachment, place all the dry ingredients together. Mix for 1 minute.
  • As the machine is running on medium low, slowly pour the can of beer into the batter.
  • Place the batter into the greased pan, and drizzle the melted butter on top. Run the knife along the edges so the butter touches all the edges.
  • Place the pan in the middle of the rack and bake for 50 minutes until top is slightly golden brown.
  • Allow the bread to completely cool before cutting into it.
