Ingredients
- ¼ cup fresh or frozen blueberries
- ½ cup lime juice about 6 limes
- ⅓ cup cane sugar or 1 tbsp agave syrup
- 4 cups water divided (1 cup for blueberries, 3 cups for lime mixture)
- 2 tsp sugar for blueberry layer
Instructions
- In a high-speed blender, add the blueberries, 2 tsp sugar and 1 cup water together. Blend until chunky and not completely smooth. Set aside.
- Rinse the blender well. Toss in the lime juice, cane sugar (or agave), and 3 cups water. Blend on high until the sugar is completely dissolved.
- Pour the lime mixture into your popsicle moulds until each is about three-quarters full. Put the mould into the freezer for about 2 to 3 hours. You want them slightly frozen, not completely set.
- When the popsicles are slightly frozen, add the blueberry mixture and leave about a quarter inch of space at the top to allow the popsicles to expand. Insert the popsicle sticks into the mould.
- Freeze for 5 hours or overnight.
- To Remove Popsicles: Let the mould stand on the counter for a few minutes. Run the popsicle mould under lukewarm water to help loosen. If you have a silicone mould you can pull and stretch it to release the popsicles.
- Place the popsicle mould on a flat plate surface and wiggle the popsicles out.
- Wrap the popsicles in plastic when you place them back into the freezer. This helps prevent them from being exposed to air and moisture and maintains the quality and texture of the popsicles, preventing freezer burn and ice crystal formation.
