In the mornings of my youth, my father would rise early and craft scallion pancakes for our breakfast. The scent of sizzling dough and fresh scallions was an uncommon delight, for my father seldom ventured into the kitchen. Each aromatic whiff was a herald of something special, a rare treat that painted our mornings with joy.

My father’s roots trace back to Shandong Province in China, where this recipe was born and lovingly passed down. It carries with it the essence of his childhood, the warmth of his mother’s kitchen, and now, it lives on in our own family’s tradition.

Ingredients

Green Onion

Fresh green onion chopped finely. We need both green and white parts.


Eggs

We will need three large eggs for this recipe. Eggs are needed for that fluffy nice texture, and flavour. 


Flour

I absolutely encourage to use cake flour or your regular all-purpose flour. You want fluffy bouncy pancakes, and to get this you will need a type of flour for caking making. 


Water

Regular drinkable water will do for this recipe. See, I told you this recipe is easy.


Fillings

Typically, our children enjoy having ketchup inside their scallion pancakes before rolling them up. Alternatively, we also use Worcestershire sauce, Maggi sauce, and soy sauce as other options.

How to make Chinese ShanDong Scallion Pancakes

Preparation

Give your green onions a good wash, and break off the yellow stems or any parts that are not useable. Get a chopping board out, and start to thinly cut the green onions. Set it aside in another bowl.

In a large bowl, add the freshly chopped green onions, eggs, and water together. Give a good whisk until the liquid is foamy and slightly thicker in consistency. 

Slowly add the flour while you're vigorously whisking the liquid. Once everything is will combined with no balls of flours. Give it a pinch of salt, and give it a few more round of whisking.

I prefer to have two non-stick frying pans simultaneously cooking the pancakes on the stove. This allows me to serve the pancakes quickly to the family. Of course, if you find multitasking like this challenging without risking burning something, it's perfectly fine to start with just one pan.

Cooking

Preheat your non-stick pans over medium-high heat. Drizzle a bit of oil onto each pan and swirl it around to ensure even distribution. Spoon a ladle-sized amount (1/2 cup) of pancake mixture onto the hot pan, making sure to include some of the green onions in each scoop. Swiftly rotate the pan to spread the mixture evenly along the edges. Once the edges begin to brown or curl up, flip the pancake and cook for 1-2 minutes on the other side. Repeat this process until all the mixture is used up.

  • Heat a teaspoon of oil in a non-stick skillet over medium heat. Use two skillet if you think you can manage two cooking at the same time. Spoon a ladle-sized amount (1/2 cup) of pancake mixture onto the hot pan, making sure to include some of the green onions in each scoop. 
  • Swiftly rotate the pan to spread the mixture evenly along the edges. Once the edges begin to brown or curl up, flip the pancake and cook for 1-2 minutes on the other side. Repeat this process until all the mixture is used up.
  • To serve: squeeze a line of your favourite condiments (ketchup, soy sauce, etc). Roll it up and serve immediately.
